Roasted Tomatoes

RECIPE
Roasting is a way to infuse tomatoes with the flavors of garlic, olive oil and spices. This versatile recipe from Master Food Preserver Susy Hymas freezes well and can be used for everything from sauces to bruschetta.

Garlic
Herbs of your choice (basil, oregano or a mix is good)
Olive oil



Core and slice the tomatoes into 2 inch pieces. Chop garlic and fresh herbs of your choice and add them to the tomatoes.

Oil a roasting pan with olive oil. Spread the seasoned tomatoes in the pan. Pour a small amount of olive oil over the tomatoes (a tablespoon or two depending on the number of tomatoes).

Roast in the oven at 325ºF for 45 minutes to an hour. The tomatoes should be soft and just starting to brown. Allow the roasted tomatoes to cool. If you want to make sauce, you can puree the whole works in a food processor. You can also freeze the tomatoes whole. Freeze or use right away.
